Loaded Creamy Chicken Quinoa Soup

My family is no stranger to food allergies and we are tired of missing out on some of our favorite foods because of those allergies. One love of ours, especially on cold winter days when we are snuggled inside our cozy home, is homemade chicken pot pie. Like many when we are down and out with an illness we like to be soothed with chicken noodle soup. When the food allergies became known to us we had to abandon those favorites, or so we thought. While the food allergies that plague me personally go far beyond just gluten and dairy I thought this recipe would be a good place to start. So I brought together chicken noodle soup and chicken pot pie and abandoned the common allergens traditionally found in those dishes, gluten and dairy.

1. Prepare 1 1/2 cups uncooked quinoa (4 cups cooked) and set aside.

2. In a skillet melt 1 tablespoon coconut oil.

3. Add diced chicken to skillet and brown the chicken.

4. Set the cooked chicken aside.

5. In a large pot on medium heat add: chicken broth, diced onion, herbs, salt/pepper, red pepper flakes, and vegetables. Let simmer until vegetables are tender but not soft.

6.  In a small sauce pan melt butter and whisk in flour until mixture is smooth. Or skip this step and just put butter and flour into the large pot and stir until smooth.

7. Add butter and flour sauce to the large pot and gently stir to combine. If you’d like your soup a little creamier simply add a little more flour but be sure to stir well before adding more.

8. Add cooked quinoa and chicken to the large pot and gently stir to combine.

9. Bring to a slight boil for 5 min then put heat on low until ready to serve.
